Our expertly trained and time served butchers maintain a skill that is becoming lost in a world of automation, and the traditional hand cut products that are created by these craftsmen provide for the bespoke needs of all our clients.
Time, care and attention to detail is essential to achieving the best from any animal, and we insist that all our meat has the time to hang and mature to enhance eating quality, and only once the meat has been hung for the correct length of time does it enter the butchery process.
We recognise that bespoke needs of the discerning client cannot be met by a standard product and our butchers and the whole Northern Catering team are all trained to identify specific needs of our clients and then to have the ability and systems in place to replicate this time after time after time.
All our products are batch controlled throughout the butchery process and are fully traceable back to source.
